Slow Cooker
Irish Stew
INGREDIENTS

2 pounds of boneless beef
chuck roast cut into 1-inch
cubes; 1/4 cup unbleached,
all-purpose flour; 1 teaspoons
salt; 1/2 teaspoons black
pepper; 2 tablespoons olive
oil; 1 onion finely chopped;
1/2 cup beef broth; 1 bay leaf;
2 cup baby carrots; 4 russet
potatoes, peeled and cut into
1-inch chunks
DIRECTIONS

1. Place beef cubes, flour and
salt and pepper in a large ziptop bag or bowl. Seal and shake
to coat all cubes with flour or
stir gently.
2. In a large skillet, heat oil until
shimmering. Add beef cubes
and brown on all sides. Do not
crowd meat in pan. Do this in
batches if your pan is not large
enough to accommodate all the
meat at one time. As the meat
browns, remove it to crockpot.
3. Add onions to the drippings
in skillet and sauté until tender.
Add the onions to crockpot.

Kale Colcannon
INGREDIENTS

5 medium Yukon gold potatoes, peeled and cut into 2-inch pieces; Kosher salt;
6 tablespoons butter, divided; 4 green onions, white parts thinly sliced, greens
sliced into 1-inch pieces; 1 large bunch of kale, stemmed and sliced into 1/2-inch
ribbons; 3/4 cup of milk; 1/2 cup of heavy cream; Freshly ground black pepper
DIRECTIONS

1. In a large pot, cover potatoes with water and season generously with salt. Bring
to a boil and cook until totally soft, 10 to 15 minutes. Drain and return potatoes to
pot. 2. Meanwhile, melt 4 tablespoons of butter in a large pot. Add green onions
and garlic, and cook until beginning to soften and smell fragrant, about 2 minutes.
Add shredded kale, milk and cream. Let cook 4 minutes, mixing often until milk
comes to a simmer and kale wilts. 3. Use a potato masher to mash kale mixture
into potatoes until smooth. Season with salt and pepper. 4. Serve with remaining
2 tablespoons of butter and more cracked pepper on top. Source: delish.com

4. Stir in beef broth and bay
leaf.
5. Cover and cook on low for
four hours.
6. Add carrots and potatoes,
and stir gently to combine.
Cook on low for another two
to four hours or until meat and
vegetables are tender.
7. Adjust the seasonings with
salt and pepper to taste.
