Panaderías hispanas crecieron en popularidad rápidamente, y “Mexican Town Bakery” estaba allí desde el principio, ayudando a sentar las bases para un negocio exitoso desde hace mucho tiempo. Su panadería tenía otra ventaja, que llegó a ser conocida por los pasteles maravillosos. Hernández estima que el 60% de las ventas son del pastel de tres leches, y ofrecen los tamaños más comunes de los pasteles de tres leches: pan, rebanadas individuales, en cuartadas y rondas. “También hacemos pastel con fondant, pero nuestra venta mas común es de tres leches”, dice. “Los fines de semana, tenemos a cinco personas sólo decorando pasteles.” BakeMark, su proveedor de panadería, es fundamental para el éxito “Mexican Town Bakery” y para su habilidad de permanecer en la vanguardia de la innovación. “Me introdujeron a todas las harinas que utilizamos para nuestros bolillos y pasteles. Además de ser dueño de la panadería al por mayor y al por menor mas un restaurante, la familia Hernández es dueño de un centro de artes escénicas en Detroit, donde traen a artistas de México. Curiosamente, de 24 años de edad, hija de Omar, Jessica Hernández, creció interpretando canciones en los altos de la panadería y ahora se está preparando para una carrera musical profesional como cantante y compositora. Su banda se llama Jessica Hernández y los deltas. Un artículo reciente del Detroit Free Press señalo, y menciona, “desde hace mucho tiempo los observadores de música de Detroit alaban a Hernández como el paquete entero: sea la composición, los “hooks”, su belleza, la presencia. Si todo va según lo previsto, su álbum debut se grabará esta primavera y se lanzara a nivel mundial en el verano. “
